Delicious Doughnut Holes

My own personal favorite! I am a sucker for doughnut holes. Once I start, I can't stop!

Ingredients:

3 cups of flour
1 cup of sugar & 1/2 cup of sugar, seperated.
2 eggs
1 cup of milk
1 tsp. vanilla extract
2 tsp. baking powder
1/2 tsp. salt
1/4 cup cinnamon
Canola Oil for frying

Directions:

Heat oil in a skillet on the stove at Medium setting. In a small mixing bowl, combine 1/2 cup of sugar and 1/4 cup of cinnamon together, set aside for later. Then, in a large mixing bowl, combine flour, baking powder, 1 cup of sugar, and salt. Then add eggs, milk and vanilla to the dry mixture. Mix until you have a smooth consistent dough. Next, roll the dough into balls about an inch in width. Place dough balls into skillet and continue to turn them until all sides are browned and dough is cooked all the way through. (cut one open if you need to test them.) Place the cooked balls on paper towels to drain the excess oil off. Once they are not dripping, but before they are dry, roll them in the cinnamon/sugar mixture. Once they are completely covered, shake off the excess and place on a serving plate. Let stand for 10 minutes to cool and serve.
