Bacon Wrapped Chicken

This recipe is so delicious, it took the place of the Thanksgiving turkey the other night! I would eat it everyday if I could afford that much bacon!

Ingredients:

1.5-2 lbs boneless skinless chicken tenderloins
1 pkge bacon, however you like it
2 cups honey
salt & pepper

Directions:

Preheat the oven to 350*. Wrap one piece of bacon around each tenderloin, and arrange side by side on a cookie sheet or baking dish. Once they are all ready, cover with a generous helping of honey. Bake for 35-40 minutes or until bacon is crispy. If it is not getting as crispy as you would like, switch oven to broil for last five minutes. Pull them out once or twice to baste with honey again. Trust me, the more honey you get on them, the better! Remove them from the oven when they are ready to your liking and let them cool for a couple minutes before serving. That's it! Bet you will be as hooked as I am!

Kielbasa & Potatoes

This comes from the brilliant mind of my lovely husband, Justin. He is a grillmaster. I swear to that. I am quite sure he learned this combo from his father, it's delicious! Peterson men are pretty good on the grill.

Ingredients

2 packages Kielbasa sausage. (Packaged In a horseshoe shape.)
12 red potatoes (if needed)
1 large yellow onion
2 tsps garlic salt
1 tbsp. seasoned salt
3 tbsps butter

Directions:

Cut the potatoes into inch cubes or so. Slice the kielbasa into about 1/2 inch slices and then slice the onions to desired size. I prefer them in 1/2 inch slices or so. Lay out a large piece of aluminum foil, place all the ingredients into the middle and wrap foil up around them like a large bowl. Drop butter into three spots in the mix and sprinkle the seasonings over top. Close the bag up by pinching it closed and folding over. Shake it up. Open to make sure the seasoning is even and close, shake ag
ain. Seal it tightly closed and grill for 30-45 minutes. Flip it every fifteen minutes. So bomb!

PS: If you have leftovers, the next morning, scramble up some eggs, throw all the leftovers and the eggs into a baking dish, top with some shredded cheese and broil for 5 minutes. Yuuuuuummm.

Good Morning Grilled Cheese

This recipe will yield six sandwiches. You might wanna double it depending on the amount of people you are cooking for. These are great for group breakfasts, such as holidays!

Ingredients:

1 package bacon (whatever kind you prefer)
1 loaf bread (whatever kind you prefer)
sliced cheese (whatever kind you prefer)
6 eggs
butter

Directions:

Fry the bacon separately, until desired crispyness. Drain on paper towel and set aside for later. Drain excess grease but leave enough to fry the eggs in. Heat a griddle or flat bottom skillet on medium. Fry an egg until desired doneness. Butter ONE side of each piece of bread. Place one piece onto the griddle, butter side down. Place the egg, cheese and two slices of bacon on top of the bread, then close by placing the second piece of bread, butter side up over the top. allow griddle to brown one side, then very carefully, so you don't break the yolk, flip and brown the other side. Serve hot!!!

Breakfast Cupcakes

Ingredients:

5 eggs
1 cup sausage (I used precooked links, and heated them in the microwave. Then crumble them in a bowl with a fork or your fingers)
Frozen hash browns
1 package country gravy
Cupcake sleeves and pan

Directions:

Preheat the oven to 375. Place cupcake liners in the pan. Mix the eggs and pour some into each liner to about halfway. Sprinkle sausage crumbles into the egg mixture. Then top with a generous supply of hash browns. Bake for 20 minutes or until hash browns have browned on top. Meanwhile, prepare gravy according to directions on package, set aside. Once the cupcakes have baked for 20 minutes, switch the oven to broil for another five minutes or until the hashbrowns are browned to your liking. Remove cupcakes from oven, allow them to cool for a couple minutes. Flip them over onto a plate and remove cupcake sleeves. Cover with gravy and they are ready to serve and absolutely amazing!

Bacon Wrapped Scallopini

*Scallopini doesn't take long to cook because it is a thin cut of meat and boneless. It absorbs flavor very well and is delicious over rice with veggies.

Ingredients:

1 lb pork scallopini
1 package bacon, uncooked
1 tbsp minced garlic
2 tbsp butter or oil

Directions:

Melt the butter in a skillet on medium. Add the minced garlic. Wrap one or two bacon strips around the scallopini. Place them in the skillet and allow them to brown for 4-5 minutes. Then, Flip over and cook another 4-5 minutes on the other side. It's ready to go!
