English Muffin Pizza Bites

Mmmmm, I have not tried this particular recipe, but I have seen it come across quite a few different forums. I loveeeeee English muffins, so this will probably be my first breakfast concoction when I get home! Try it out and let me know what you think!

Ingredients:

4 english muffins
1 tomato, sliced
2 hard boiled eggs
1 cup grated mozerella
1/2 tsp. vinegar (to help keep eggs from sticking)
olive oil


Directions:

Fill a small pot with water, add vinegar, enough to cover eggs, place eggs carefully into the pan. Turn on high heat and wait for the water to boil. Once the water has boiled, turn heat off and cover with lid. Leave eggs in the water to cook while they cool down for about 10-12 minutes. Meanwhile, open the english muffins and toast them. Peel the eggs and cut them into 1/4 slices. Once toasted, drizzle a bit of olive oil onto each muffin, then add a slice or two of tomato, then a generous helping of cheese, and a few pieces of eggs. Broil for 5 minutes or until cheese is melted. Mmmmm, can't wait to try these!
