Bite Sized Ice Cream Sandwiches

Need I say more!!!???


Ingredients:

2 tablespoons sugar
1-1/2 teaspoons cornstarch
1 tablespoon butter, melted
1/2 cup milk
1/2 teaspoon vanilla extract
2/3 cup sweetened condensed milk
1 cup heavy whipping cream
1 pack miniature chocolate chip or sugar cookies
1 bag miniature chocolate or peanut butter chips

Directions:

In a small saucepan, combine sugar, cornstarch & butter. Then slowly stir in milk. Bring to a boil over medium heat. Cook & stir for 2 minutes or until the mixture thickens. Remove from the heat to cool & stir in vanilla. Cool completely. Stir in condensed milk.
In a large bowl, beat the cream until peaks form, you can use a wisk or a mixer. Once the mixture is ready, stir it into milk mixture. Divide between two freezer containers. Stir one cup chocolate chips into one container & one cup peanut butter chips into the other. Cover and freeze both mixtures for 6 hours or until firm.
When you are ready to construct the sandwiches, pour the remaining chocolate and peanut butter chips onto seperate plates. Once the ice cream has set, use a melon baller or small spoon to scoop ice cream onto whichever cookie you would like to use. Place the other cookie over the ice cream and give it a little squeeze to bind them. Last, roll the cookie sandwich over the chips of your choice to coat the visible ice cream.
Serve Immediately or freeze until ready to eat.
