Bacon Wrapped Scallopini

*Scallopini doesn't take long to cook because it is a thin cut of meat and boneless. It absorbs flavor very well and is delicious over rice with veggies.

Ingredients:

1 lb pork scallopini
1 package bacon, uncooked
1 tbsp minced garlic
2 tbsp butter or oil


Directions:

Melt the butter in a skillet on medium. Add the minced garlic. Wrap one or two bacon strips around the scallopini. Place them in the skillet and allow them to brown for 4-5 minutes. Then, Flip over and cook another 4-5 minutes on the other side. It's ready to go!
