Bacon Wrapped Chicken

This recipe is so delicious, it took the place of the Thanksgiving turkey the other night! I would eat it everyday if I could afford that much bacon!


Ingredients:

1.5-2 lbs boneless skinless chicken tenderloins
1 pkge bacon, however you like it
2 cups honey
salt & pepper


Directions:

Preheat the oven to 350*. Wrap one piece of bacon around each tenderloin, and arrange side by side on a cookie sheet or baking dish. Once they are all ready, cover with a generous helping of honey. Bake for 35-40 minutes or until bacon is crispy. If it is not getting as crispy as you would like, switch oven to broil for last five minutes. Pull them out once or twice to baste with honey again. Trust me, the more honey you get on them, the better! Remove them from the oven when they are ready to your liking and let them cool for a couple minutes before serving. That's it! Bet you will be as hooked as I am!

Grilled Red Pepper Asparagus

Can't go wrong with asparagus!

Ingredients:

1 bundle of asparagus
2 tbsps butter
1 tbsp minced garlic
red pepper flakes


Directions:

Pull about 18 inches of aluminum foil off for this. Prepare asparagus by breaking off the last inch or so of stock on them, NOT the end with the bloom, the end that tends to get brown and dry. If you hold both ends and bend the asparagus should naturally break where it is ripe from. Throw away the little pieces that break off. Then place the remaining sticks on the tin foil in a pile. Melt the butter in the microwave for 15-20 seconds and add the minced garlic and about a tsp of red pepper flakes, more if you prefer. Drizzle the butter mixture over the top of the asparagus, be sure to get as much coverage as you can, leave the excess in the bottom of the foil. Close it up and grill it for about 15 minutes or so, turning a few times. Remove from heat and wait to open until serving time to allow the flavors to really seep in. Mmmm.

Almost Finnish Cauliflower Casserole

Wanted to try some new things with cauliflower because we eat it a lot, it's one of my favs. Had an old Food Network catalog that I was getting ready to trim, and found this recipe for Finnish Caulflower which called for Rye Bread, none of my family are fans so I decided to switch it up a bit and give it a shot with a twist. It was delicious. I added a couple of my own extras to it and it was amazing! My husband AND my kids killed it quick!

Ingredients:

1 15-18 oz bag frozen cauliflower, thawed.
2 cups french bread, cubed.
1.5 cups shredded cheese
1/2 cup queso, any flavor
4 eggs
1 cup of beer, preferrably of an amber color
2 tbsps butter

Directions: Preheat the oven to 350*. Saute cauliflower on medium high in a skillet with butter until tender, no longer than 5 minutes. Remove from the heat, stir in the queso, then the shredded cheese, then the french bread cubes. Spread evenly into a baking pan. In a small bowl, wisk eggs and beer together. Pour over the top of the cauliflower mixture. Bake at 350* for 30-35 minutes. It's like a veggie breakfast casserole! So filling!

Mango Chipotle Chicken

I have not had the luxury of trying this deliciousness yet, only because I do not have a couple ingredients, but I will most definitely be grabbing them next time I go grocery shopping!

Ingredients:

2 lbs bone in chicken pieces (legs, thighs, breasts, etc.)
2 full mangos 1/2 cup mango nectar 3 chipotle peppers from the can (in adobo sauce) 1 small yellow onion 5 garlic gloves 3 tbsp lemon juice juice of one lime 2 tbsp of agave nectar (or sugar) 3/4 of a bunch of cilantro (stems and all, most flavor is in the stem)



Directions: 
Combine all ingredients, except chicken, in a blender until it is smooth enough for your taste. Place all the chicken pieces in a baking dish and cover with the sauce, DRENCH it! Cover the pan and place in the fridge for about an hour to absorb all the delicious flavors. When you are ready to bake them, preheat the oven to 350*. Bake for about an hour. Serve! I can't wait to try it, it sounds amazing!

Crispy Cabbage Steaks

It must be the Irish in me :)

Ingredients:

1 head of cabbage
2 tbsps olive oil
1 tbsp minced garlic
1 tbsp red pepper flakes
Non stick spray

Directions:

Preheat oven to 400* and spray a cookie sheet with non stick spray. Tear off the top layer or so of the head of cabbage, it's usually dingy from sitting in the produce section for a couple days. Slice the remaining cabbage into 1" slices, to create a patty like shape. Place them on the cookie sheet. In a mixing bowl, mix the olive oil, garlic and red pepper flakes together. Use a brush of knife to spread the marinade over the top of the patties, then flip them over and do the other side. Depending on the size of your head of cabbage, you may need to increase the amount of ingredients you use in the marinade. Once they all have a generous helping of juices, bake them for 30 minutes on one side, then flip them over and bake for another thirty minutes, or until they are desired tenderness. Yumm!
